Mirchi Ka Salan Recipe

Mirchi-ka-salan recipe. How to make hyderabad mirchi ka salan recipe for Hyderabad famous biryani.


Ingredients:

  • 50 grams peanuts.
  • 50 grams sesame seeds / til seeds.
  • 50 grams dry coconut.
  • Two table spoons ginger and garlic paste.
  • 1/2 table spoon turmeric powder.
  • One table spoon garam masala powder.
  • Two table spoons lal mirch powder.
  • 1/4 table spoon methi seeds  powder.
  • Green chilis less hot
  • Half cup oil
  • 1 tsp cumin seeds / jeera
  • few curry leaves / kadi patta
  • ½ medium sized onion finely chopped
  • ½ cup tamarind water
  • salt to taste
  • ½ tsp jaggery / gud optional
  • 2 cups water as required to adjust consistency
  • 2 tbsp coriander leaves finely chopped

Preparation

First dry roast peanuts, sesame seeds, poppy seeds and coconut until golden brown. Then transfer all to blender and allow it to cool completely before making fine paste and add ginger and garlic paste to it, garam masala, turmeric and chili powder, methi seeds. add water as required and blend to smooth paste. keep aside. in a kadai heat oil and fry de-seeded green chili. keep aside. now add cumin and curry leaves. furthermore, add onions and saute.add prepared masala paste, tamarind water, jaggery and salt. mix well and add 2 cups of water. cover and simmer for 30 minutes. further place the fried chilis into salan and also add coriander leaves. cover and simmer for 5 minutes. finally, serve mirchi ka salan with famous Hyderabad dum Biryani.

Hyderabadi Chicken Dum Biryani recipe

Preparation time 60 mins to 2 hours

Ingredients:

Chicken 2 kgs with or without bone
Oil 1/2 ltr
Onions fried
Food color a pinch
Coriander  and mint leaves 5 bunches finely chopped
Ghee 100 grams
Rose water few drops
Salt to taste

Marinating process, marinate chicken with all the ingredients including 2 cups curd and let it soak for 2 to 6 hours.

Basmati Rice 1 kg
Preparation method:
First wash and soak basmati rice for at least 1 hour.
Bring water to boil rice and required amount of salt. Once it boils, add the drained rice and cook it till 50 percent done, drain it and keep aside.
Take big Biryani handi for making biryani. Now add cicken and mix well for 5 mins. Now add the half cooked rice over it the add fried onions, chopped mint, food color and ghee, add few drops of rose essence. Cover the entire bowl with foil and let it cook on  a high to low flame for 30 mins.
After 30 minutes remove the lid and serve the Hyderabad famous chicken dum biryani.
